Indian Rice Recipes - Rice Pancakes (Appam) Recipe

Ingredients

  • 3 cups (600 g) uncooked rice

  • 3 tablespoons white lentils (urad dal)

  • 2 cups (500 ml) coconut milk

  • 1/2 teaspoon baking soda (bicarbonate of soda)

  • 1 teaspoon salt

  • Oil, to grease


Method:

  1. Soak the rice and white lentils in water for 4 hours. Drain, then place in a blender or food processor and grind to a thick paste. Leave to ferment overnight.

  2. Add the coconut milk, baking soda and salt to the paste, and beat thoroughly to mix.

  3. Grease a small heavy nonstick wok over low heat. Pour in a ladle of the batter, grab both sides of the wok and swirl the batter so that it spreads evenly in the shape of a circle, over the base of the wok. Cook on low heat for 2 minutes, or until bubbles form on the surface. The edges should be crispy and the center thick and moist. Serve with Fresh Coconut Chutney and Yellow Lentil and Tomato Stew (refer recipe).
