Crispy Fish Morsels (Machchi Amritsari) Recipe
Ingredients

1 lb (500
g) white fish fillets

Oil for deep-frying

1/2 teaspoon Chaat Masala (refer
recipe)

Pinch of Garam Masala (refer
recipe)
Batter
-
1 1/2 tablespoons oil
-
1 cup
(120 g) chickpea
flour or besan
-
1 egg,
lightly beaten
-
1/2 teaspoon crushed garlic
-
1/2 teaspoon minced ginger
-
1/2 teaspoon ground red pepper
-
1 teaspoon paprika
-
1/2 teaspoon ground turmeric
-
1 teaspoon carom seeds
(ajwain), rubbed slightly
with the hand

1 teaspoon salt
-
1 teaspoon Chaat
Masala (refer recipe)

1 tablespoon minced coriander
leaves (cilantro)
-
1-2 green
chilies, deseeded and
-
minced 2
teaspoons lemon juice

1/2 cup (125 ml) cold water
Method:
-
Prepare the
Batter by heating the oil in a wok and mixing in the
chickpea flour. Stir for 1 minute. remove from the
heat and allow to cool. Mix in the rest of the
Batter ingredients.

Cut the fish into
large pieces, dip them into the Batter and allow to
stand for 20 minutes. Heat the oil in a wok and fry
the fish for 3 minutes until crisp on the outside
and cooked on the inside. Sprinkle with Chaat Masala
and Garam Masala and serve hot.
Note:
The Batter can be made up to 1 day in advance, then kept
refrigerated. Make sure you stir it well before using.
