Indian Seafood Recipes - Kerala Shrimp Curry (Kanju Masala) Recipe

Ingredients

  • 2 dried chilies, torn and soaked in water to soften

  • 2 teaspoons black peppercorns

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon ground turmeric

  • 3/4 in (2 cm) ginger, sliced

  • 4-6 cloves garlic

  • 1 1/4 lbs (600 g) shrimp, peeled and divined

  • 1 1/2 tablespoons of oil

  • 20 curry leaves

  • 1/2 teaspoon black mustard seeds

  • 1 small onion, sliced

  • 3 tablespoons tamarind pulp, soaked in 1 cup (250 ml) warm water, mashed, then strained

  • 1/2 teaspoon salt


Method:

  1. In a blender or food processor, grind the chilies, peppercorns, cumin, turmeric, ginger and garlic, adding just a little oil if necessary to keep the blades turning. Combine the spice blend with the shrimp and set aside.

  2. Heat the oil in a wok and stir-fry the curry leaves and mustard seeds for 1 minute until the mustard seeds begin to pop. Add the onion and stir-fry until golden brown. Add the shrimp, stirring for 1 to 2 minutes until the shrimp begin to turn pink. Pour in the tamarind juice, add the salt and simmer for about 5 minutes until the shrimp are cooked.
