Indian Vegetables Recipes - Potatoes with Poppy Seeds and Chilies (Aloo Posta) Recipe

Ingredients

  • 1 1/2 tablespoons mustard oil or vegetable oil

  • 1 bay leaf

  • 1/2 lb (250 g) potatoes, peeled and cubed

  • 1/2 teaspoon ground turmeric

  • 1/2 teaspoon ground red pepper

  • 2 green chilies, deseeded and sliced

  • 1/2 cup (75 g) white poppy seeds, soaked in water 30 minutes, then ground to a paste

  • 1/2 teaspoon salt


Method:

  1. Heat the oil in a wok and stir-fry the bay leaf and potatoes for 2 to 3 minutes. Add the turmeric, red pepper and green chilies and continue stirring for 1 minute. Add the poppy-seed paste, salt and just enough water to cover the potatoes.

  2. Cover the wok and simmer for about 5 minutes until the potatoes are half cooked. Uncover and simmer for 5 to 10 minutes, stirring occasionally, until the potatoes are tender and the liquid has evaporated. Serve with rice.
