Indian Vegetables Recipes - Vegetarian Paneer Shashlik

Ingredients
1/2 lb (250 g)
Homemade Paneer
2 green or red
bell peppers
2 medium onions
2 medium tomatoes
1 cup (100 g)
pineapple chunks
8 button mushrooms
Oil to brush the
skewers
Marinade
3
tablespoons
yogurt
1 tablespoon oil
1 teaspoon tomato
paste
1 teaspoon salt
1 teaspoon ground
red pepper
1 teaspoon ground coriander
1 teaspoon
ground cumin
Method:
Combine all the
Marinade ingredients. Cut the paneer, peppers,
onions and tomatoes into chunks of roughly equal
size, add the pineapple and mix thoroughly with the
Marinade. Leave to marinate for 1 hour, then thread
the ingredients onto skewers.
Cook in a hot
oven, under a grill, or over a hot barbecue for 7 to
8 minutes on each side, brushing with oil and
turning halfway through cooking.
