Heart
(Kalio Hati) Recipe
Ingredients

1lb. (500 g.) beef
heart
-
5 cups thick santan/thick
coconut milk
-
1 stalk serai/lemon grass (crushed)
-
1 daun kunyit/turmeric
leaf (shredded)
Pounded Ingredients:

1/2 oz. (45 g.) red chilies
-
10 shallots
-
3 cloves garlic
-
1/2-inch (1.2-cm.) piece
laos/galangal
-
1/4-inch (6-mm.) piece kunyit/turmeric root
-
1/2-.inch (1.2.cm.) piece ginger root
-
1 teaspoon salt
Serves 4
Method:
-
Slice beef heart, clean well and cut into
1-inch
(2.5-cm.) cubes.

Strain coconut milk into a pan. Mix
in remaining ingredients, except the heart.

Bring to
the boil, then reduce heat. Simmer, stirring
occasionally, till gravy thickens and the oil begins to
separate.

Add heart and cook for 1 hour, or till
done. Adjust seasoning and discard lemon grass and
turmeric leaf.

Dish up and serve hot with boiled
white rice.
