Chicken
(Singgang Ajam) Recipe
Ingredients
-
3 lb. (Ph kg.)
chicken (cut into 1/2 lengthwise & discard neck & feet)

1 pt. (600 ml.) thick
coconut milk
-
1 stalk lemon grass
(bruised)
-
2 bay leaves
Marinade Ingredients:
-
2 onions (chopped)
-
3 cloves garlic (chopped)
-
3 red chilies (seeded &
ground)
-
1 dessertspoon chopped
ginger
-
1/4 teaspoon turmeric powder
-
1/2 teaspoon ground
peppercorn
-
1 teaspoon salt
Serves 4
Method:
-
Rub chicken halves thoroughly with marinade ingredients.
Leave aside for 1 hour.

Pour coconut milk into large
saucepan. Add in lemon grass and bay leaves. Bring to
boil, uncovered over medium heat. Stir continuously.

Lower heat and add in chicken halves. Simmer uncovered
till chicken is 3/4-cooked. Baste chicken with coconut
milk continuously.

Transfer chicken onto a grilling
rack. Grill in preheated oven at 400F/Gas Mark 6 till
chicken is cooked.

Place chicken onto serving plate
and pour over retained marinade sauce. Serve.
