(Sambal Kacang) Recipe
Ingredients

1lb.
(500 g.)
shelled peanuts
-
3 tablespoons cooking oil
-
1 clove garlic (crushed)
-
10 shallots (ground)
-
3 cups santan/coconut milk
-
salt & monosodium
glutamate to taste
-
1/4 cup vinegar
-
1 tablespoon fried shallot
flakes
Pounded Ingredients:
Serves 6-8
Method:

Dry-fry peanuts in a
heavy-based pan till
golden. Remove skins and pound coarsely.

Heat oil on
medium flame. Fry garlic and shallots till golden.

Add pounded ingredients and fry till the oil separates.
-
Mix in peanuts and coconut milk. Season to taste.
Continue stirring over medium flame, till mixture is
well blended and thick.

When oil separates, add vinegar. Bring to the boil and
remove from heat.

Garnish with fried shallot flakes.
Serve hot or cool.
