Asian Festive Dishes Recipes - Indonesian Peanut Sambal (Sambal Kacang) Recipe

Ingredients

  • 1lb. (500 g.) shelled peanuts

  • 3 tablespoons cooking oil

  • 1 clove garlic (crushed)

  • 10 shallots (ground)

  • 3 cups santan/coconut milk

  • salt & monosodium glutamate to taste

  • 1/4 cup vinegar

  • 1 tablespoon fried shallot flakes

Pounded Ingredients:

  • 8-10 red chilies

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1-inch piece (2.5-cm.) terasi/dried shrimp paste (dry-fried)

Serves 6-8


Method:

  1. Dry-fry peanuts in a heavy-based pan till golden. Remove skins and pound coarsely.

  2. Heat oil on medium flame. Fry garlic and shallots till golden.

  3. Add pounded ingredients and fry till the oil separates.

  4. Mix in peanuts and coconut milk. Season to taste. Continue stirring over medium flame, till mixture is well blended and thick.

  5. When oil separates, add vinegar. Bring to the boil and remove from heat.

  6. Garnish with fried shallot flakes. Serve hot or cool.
