Rolls
(Kuih Nenas) Recipe
Ingredients
Filling Ingredients:

1 medium pineapple
(peeled, eyes removed & pulp finely chopped)

1 cup sugar
-
2 2-inch (5-cm.) kayu
manis/cinnamon sticks

1/3 cup water
Serves 4
Method:
-
To prepare
filling. Combine
all the ingredients in a pan. Bring to the boil, then
reduce flame to low.

Simmer till mixture is thick and
dry. Stir occasionally to prevent burning. Remove pan
from flame and cool mixture.

To prepare
rolls. Sift flours
together and mix in egg-yolks. Add vanilla essence.

Gradually add butter, kneading well to make a pliable
dough. Press or roll out portions of the dough till
quite thin and spoon a portion of filling onto the
centre. Draw up ends to enclose filling, pinch ends to
seal and shape into neat rolls.

Coat each roll with egg-white, then arrange on a
greased baking tray.

Bake in a preheated moderate
oven (400 F/gas mark 6) till golden and done.

Cool slightly
before removing from tray to serve.
