Asian Festive Dishes Recipes - Indonesian Rice with
Chicken
(Nasi Beriani) Recipe
Ingredients

2 chicken breasts
(boned & meat cubed)

1 1/2 cups yoghurt
-
1/3 cup ghee
-
1 large onion (finely
chopped)
-
4 cloves garlic, (minced)
-
4 green chilies (minced)
-
1 teaspoon ground ginger
-
2 teaspoons ground jintan
putih/white cumin
-
6-8 bunga cengkih/cloves
-
2-inch. (5-cm.) kayu manis/cinnamon
stick
-
2 cups rice (washed &
drained)
-
1/2 teaspoon kunyit/ground
turmeric
-
salt to taste
-
2 1/2 cups boiling water
-
1 chicken stock cube
Serves 6-8
Method:
-
Season chicken meat with yoghurt for 20-30 minutes.

Heat ghee and lightly fry onion. Add garlic,
chilies,
ginger, white cumin, cloves and cinnamon.

Fry for 3
minutes, till fragrant, then add chicken, plus yoghurt,
turmeric and salt, to taste.

Mix well and reduce
heat. Cook covered, till chicken is tender. Drain out
chicken and keep aside.

Add stock to the same pan.
Bring to the
boil and put in rice.

Cover pan tightly
and cook on low flame till rice is done and all the
moisture is absorbed.

Scoop out some rice from the
centre and place chicken in the depression. Replace rice
over it and keep warm till time to serve.
Note: Chicken
may be substituted with beef or mutton.
