Asian Festive Dishes Recipes - Indonesian Traditional Chicken Dish (Rendang Ayam) Recipe

Ingredients

  • 1 chicken (3 lb./1 1/2 kg.) (cleaned & cut into convenient pieces)

  • salt & ground black pepper to taste

  • cooking oil for shallow-frying

  • 1 stalk serai/lemon grass (crushed)

  • 1 1/2 cups pati san tan/coconut cream

  • juice of 1 jeruk nipis/lime

Ground Ingredients:

  • 4 oz. (125 g.) shallots

  • 8 cloves garlic 10 red chilies

  • 1-inch (2.5-cm.) piece kunyit/turmeric root

  • 2 teaspoons salt

Serves 4-6


Method:

  1. Season chicken with salt and pepper. Leave aside for 15-20 minutes.

  2. Heat oil on high flame. Add chicken and brown evenly. Drain out and keep aside.

  3. Reduce oil to 2 tablespoons. Add ground ingredients and lemon grass. Fry till the oil separates.

  4. Reduce flame and add coconut cream and lime juice. Simmer 3-5 minutes.

  5. Add chicken and continue simmering till chicken is tender and gravy is thick.

  6. Serve hot with boiled white rice.
