Asian Recipes - Indonesian Traditional Chicken Dish (Rendang Ayam) Recipe
Ingredients
1 chicken (3 lb./1 1/2 kg.) (cleaned & cut into convenient pieces)
salt & ground black pepper to taste
cooking oil for shallow-frying
1 stalk serai/lemon grass (crushed)
1 1/2 cups pati san tan/coconut cream
juice of 1 jeruk nipis/lime
Ground Ingredients:
4 oz. (125 g.) shallots
8 cloves garlic 10 red chilies
1-inch (2.5-cm.) piece kunyit/turmeric root
2 teaspoons salt
Serves 4-6
Method:
Season chicken with salt and pepper. Leave aside for 15-20 minutes.
Heat oil on high flame. Add chicken and brown evenly. Drain out and keep aside.
Reduce oil to 2 tablespoons. Add ground ingredients and lemon grass. Fry till the oil separates.
Reduce flame and add coconut cream and lime juice. Simmer 3-5 minutes.
Add chicken and continue simmering till chicken is tender and gravy is thick.
Serve hot with boiled white rice.
