Asian Festive Dishes Recipes - Indonesian Yellow Glutinous Rice (Ketan Kuning) Recipe

Ingredients

  • 2 cups ketan/glutinous rice

  • water to cover

  • 1 teaspoon kunyit/ground turmeric

  • 2 cloves garlic (crushed)

  • 1/4 teaspoon salt

  • 1 3/4 cups santan/coconut milk

  • 2 daun pandan/Screw pine leaves

Serves 4


Method:

  1. Rinse glutinous rice thoroughly and drain well.

  2. Mix turmeric solution and garlic. Soak glutinous rice in this for at least 3 hours. Drain glutinous rice and discard garlic.

  3. Combine salt and coconut milk in a large pan. Bring to the boil and add glutinous rice and Screw pine leaves.

  4. Continue boiling for 1 minute, then reduce flame to very low. Cook covered, till glutinous rice has absorbed all liquid and is tender and grainy.

  5. Discard Screw pine leaves. Dish up glutinous rice' and serve hot, with Rendang or Singgang Ayam. If liked, press into a jelly mould and un-mould, as shown in the picture. Garnish if desired.
