Asian Meats Recipes - Indonesian Bali-Style Beef (Daging Bumbu Bali) Recipe

Ingredients

  • 1lb. (500 g.) beef (cut into slices)

  • 4 tablespoons cooking oil

  • 1-inch (2.5-cm.) piece laos/galangal

  • a few daun salam/2 bay leaves

  • a few daun jeruk purut/curly lime leaves

  • salt & pepper to taste

  • 1-2 teaspoons kicap asin/light soy sauce

  • 1 1/2 dessertspoons tamarind paste, 1/2 cup water, mixed & strained to extract juice                                           

Ground Ingredients:

  • 10 shallots

  • 4 cloves garlic

  • 6-8 red chilies

  • 3 buah keras/candlenuts

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry fried)

  • 1 dessertspoon gula Jawa/palm sugar

Serves 4


Method:

  1. Heat oil. Stir-fry ground ingredients, galan­gal and all the leaves.

  2. Add meat and coat well. Cook covered over low heat for 10-15 minutes.

  3. Add a little water, seasoning, soy sauce and tamarind juice. Simmer till gravy is thick and oily at the surface.

  4. Remove from flame. Discard galangal and leaves.

  5. Serve hot with boiled white rice and other dishes.
