Asian Meats Recipes - Indonesian Beef Specialty (Abon Surabaya) Recipe

Ingredients

  • 1 lb. (500 g.) beef (boiled till tender)

  • 1/2 coconut (grated white)

  • 1/2 coconut (grated & thick santan/thick coconut milk extracted)

  • salt to taste

  • 1/2 cup coconut oil

Ground Ingredients:

  • 4 medium onions (sliced)

  • 1 bulb garlic (skinned)

  • 1 teaspoon terasi/dried shrimp paste (dry-fried)

  • 1 slice laos/galangal

  • 1-inch (2.5-cm.) piece ginger root

  • 5 buah keras/candlenuts

  • 1 dessertspoon sugar

Serves 6


Method:

  1. Pound the cooked meat with a pestle. Separate all fibers and mix with the grated coconut and ground ingredients.

  2. Add coconut milk and salt to taste. Cook till mixture is dry, stirring continuously.

  3. Cool slightly, then pound the mixture till fine.

  4. Heat oil to smoking point. Fry the pound­ed mixture till dry, stirring quickly. Remove from flame and place in a strainer. Press out excess oil.

  5. Allow to cool completely before storing.

  6. Serve with boiled white rice, or use as a filling for sandwiches or omelets.
