Asian Meats Recipes - Indonesian Beef Stewed in Creamy-Hot Sauce (Daging Bumbu Rujak) Recipe

Ingredients

  • 3 tablespoons cooking oil

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1 stalk serai/lemon grass (crushed)

  • 4 daun salam/1 bay leaf

  • 1lb. (500 g.) beef (cut into convenient pieces)

  • 1 cup thin santan/thin coconut milk

  • 1 cup thick santan/thick coconut milk

  • 1 1/2 dessertspoons tamarind paste mixed with 1/2 cup water and strained to extract juice

  • salt to taste

Ground Ingredients:

  • 6 shallots

  • 2 cloves garlic

  • 8 red chilies

  • 5 buah keras/candlenuts

  • 2 dessertspoons gula Jawa/palm sugar

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 teaspoon salt

Serves 4


Method:

  1. Heat oil and stir-fry ground ingredients, galangal, lemon grass and salam or bay leaves. Cook for 5 minutes.

  2. Add meat and stir-fry till well coated and lightly browned.

  3. Add thin coconut milk and cook till meat is tender.

  4. Add thick coconut milk and stir-cook till the oil separates. Stir in tamarind juice and adjust seasoning.

  5. Remove from heat. Discard galangal, lemon grass and salam or bay leaves.

  6. Serve hot with boiled white rice, pickles and vegetable dishes.
