Asian Meats Recipes - Indonesian Dried Meat with Coconut (Dendeng Ragi) Recipe

Ingredients

  • cooking oil

  • 1 onion (grated)

  • 3 cloves garlic (finely chopped)

  • 2 red chilies (seeded & finely chopped)

  • 1/2 teaspoon ground black pepper

  • 1 1/2 teaspoons ketumbar/ground coriander

  • 1/2 teaspoon jintan putih/ground cummin

  • 1lb. (500 g.) rump steak (sliced into thin 2-in./5-cm. squares)

  • 1/2 lb. (250 g.) fresh grated young coconut

Seasoning Ingredients:

  • salt, to taste

  • 1 tablespoon lemon juice

  • 1 1/2 teaspoons gula Jawa/palm sugar

Serves 4


Method:

  1. Heat 2 tablespoons oil in skillet. Sauté onion, garlic, chilies, black pepper, coriander and cumin, till onion is soft.

  2. Add meat and fry till color changes.

  3. Lower heat, add seasoning ingredients and coconut. Stir till meat is cooked, coconut is evenly browned, and the mixture is dry.

  4. Dish up and serve with a rice meal or use to make sandwiches.
