Asian Meats Recipes - Indonesian Dry Meat Curry
(Terik Daging) Recipe
Ingredients

4 tablespoons cooking
oil
-
6 salam leaves/2 dried
bay leaves
-
1lb. (500 g.) beef
(cut into small cubes)
-
1 1/2 cups thick santan/thick
coconut milk
-
2 pieces asam gelugur/dried tamarind
slices
-
salt to taste
-
coriander leaves (to
garnish)
Ground Ingredients:
-
5 shallots
-
2 big onions (sliced &
fried)
-
1 tablespoon ketumbar/coriander
seeds
-
1 teaspoon jintan
putih/white cummin seeds
-
1 dessertspoon white
peppercorns
-
5 buah keras/candlenuts
-
2 teaspoons sugar
-
1/2.inch (1.2-cm.)
piece laos/galangal
Serves 4
Method:
-
Heat oil. Stir-fry ground ingredients and salam or
bay leaves till golden brown.
-
Add meat and fry
till well-coated with the fried mixture.
-
Add coconut milk, tamarind slices and salt to taste.
Cook till nearly dry, stirring frequently.
-
Remove from flame. Discard salam or bay leaves.
-
Garnish and serve with boiled white rice and other
dishes.
