Asian Meats Recipes - Indonesian Dry Meat Curry (Terik Daging) Recipe

Ingredients

  • 4 tablespoons cooking oil

  • 6 salam leaves/2 dried bay leaves

  • 1lb. (500 g.) beef (cut into small cubes)

  • 1 1/2 cups thick santan/thick coconut milk

  • 2 pieces asam gelugur/dried tamarind slices

  • salt to taste

  • coriander leaves (to garnish)

Ground Ingredients:

  • 5 shallots

  • 2 big onions (sliced & fried)

  • 1 tablespoon ketumbar/coriander seeds

  • 1 teaspoon jintan putih/white cummin seeds

  • 1 dessertspoon white peppercorns

  • 5 buah keras/candlenuts

  • 2 teaspoons sugar

  • 1/2.inch (1.2-cm.) piece laos/galangal

Serves 4


Method:

  1. Heat oil. Stir-fry ground ingredients and salam or bay leaves till golden brown.

  2. Add meat and fry till well-coated with the fried mixture.

  3. Add coconut milk, tamarind slices and salt to taste. Cook till nearly dry, stirring frequently.

  4. Remove from flame. Discard salam or bay leaves.

  5. Garnish and serve with boiled white rice and other dishes.
