Asian Meats Recipes - Indonesian Fried Spiced Liver (Hati Goreng Singgang) Recipe

Ingredients

  • 2 tablespoons cooking oil

  • 2 medium onions (sliced)

  • 1lb. (500 g.) chicken livers (cleaned & sliced)

  • 1/2 cup thick santan/thick coconut milk

  • a few curry leaves

  • 1/2 stalk serai/lemon grass (bruised)

  • salt and brown sugar, to taste

  • lime juice, to taste

  • 1 red chili (sliced)

  • 1 tablespoon chopped spring onions

Ground Ingredients:

  • 1 teaspoon chili powder

  • 1/2-inch (1.2.cm.) piece terasi/dried shrimp paste

  • 1/2-inch (1.2.cm.) piece laos/galangal

  • 3 cloves garlic

Serves 4


Method:

  1. Heat oil over medium flame. Fry onions till soft.

  2. Add ground paste and fry well. 3. Add liver pieces and stir-fry 2 minutes.

  3. Lower heat and add remaining ingredients, except lime juice, chili and spring onions.

  4. Cook over low heat till liver is done and the curry is thick. Remove from flame and discard curry leaves and lemon grass.

  5. Add lime juice to taste and dish up. Garnish with red chili and spring onions.

  6. Serve hot with boiled-white rice.
