Serves 3-4
Method:

Place tongue in the boiling water. Reduce heat after
5 minutes. Simmer till tender. Drain and reserve
stock.

Skin tongue. Prick and tenderize it, then
season and leave aside for 1 hour. Turn over now and
then.

Heat margarine and fry tongue till well done. Drain
and keep aside. Add reserved stock to same pan.

Add seasoning ingredients for gravy. Boil a few
minutes. Adjust seasoning. Dish up.

Slice tongue
into thin pieces. Dish up and garnish with potato
crisps.

Serve hot with the gravy.
