Asian Meats Recipes - Indonesian Fried Tongue (Bistik Lidah) Recipe

Ingredients

  • 1 cow's tongue (well cleaned; soaked 1 1/2 hours & drained)

  • boiling water to cover

  • 4 tablespoons margarine

  • 1/2 lb. (250 g.) potatoes (make potato crisps)

Seasoning Ingredients for Tongue:

  • 1 tablespoon kicap asin/light soy sauce

  • 3 dessertspoons vinegar

  • salt, pepper & nutmeg to taste

Seasoning Ingredients for Gravy:

  • 4 tablespoons kicap asin/light soy

  • sauce salt, pepper & nutmeg to taste

Serves 3-4


Method:

  1. Place tongue in the boiling water. Reduce heat after 5 minutes. Simmer till tender. Drain and reserve stock.

  2. Skin tongue. Prick and tenderize it, then season and leave aside for 1 hour. Turn over now and then.

  3. Heat margarine and fry tongue till well done. Drain and keep aside. Add reserved stock to same pan.

  4. Add seasoning ingredients for gravy. Boil a few minutes. Adjust seasoning. Dish up.

  5. Slice tongue into thin pieces. Dish up and garnish with potato crisps.

  6. Serve hot with the gravy.
