Meat Relish (Awul-Awul) Recipe
Ingredients

1 lb. (500 g.) beef

boiling water to cover
-
salt to taste
-
a few daun salam/1 bay
leaf
-
1-inch (2.5-cm.) piece
galangal (crushed)

1 1/2 dessertspoons tamarind paste
and
1/2 cup
water, mixed and strained to extract juice

1 1/2 cups pati santan/coconut
cream juice
Ground Ingredients:

2 tablespoons ketumbar/coriander
seeds
-
2 teaspoons jintan
putih/white cumin seeds

1 dessertspoon gula Jawa/palm
sugar

1/2 teaspoon salt
-
12 shallots
-
4 cloves garlic
Serves 4
Method:

Put meat into the
boiling water. Add salt, salam or bay leaves and
galangal. When meat is tender, remove from stock and
grate finely.

Blend tamarind juice into ground
ingredients. Place mixture in a heavy-based pan.

Add grated meat and coconut cream. Cook on low flame
till completely dry. Stir frequently. Adjust
seasoning.

Serve hot or cold with boiled white
rice, or use as a filling in sandwiches or omelet's.
Note:
This relish will keep a few days.
