Asian Meats Recipes - Indonesian Meat Soup (Sup Daging) Recipe

Ingredients

  • 2 lb. (1 kg.) tulang som som/soup bones

  • 7 1/2 cups water

  • 2 petals bunga lawang/star anise                      

  • 2 2.inch (5-cm.) kayu manis/cinnamon sticks

  • 4 whole lada hitam/black peppercorns (crushed)

  • 3 buah kepulaga/cardamoms (shelled)

  • salt to taste

  • 1 tablespoon cooking oil

  • 1/2 inch (1.2-cm) piece ginger root

  • 1 slice laos/galangal pounded

  • 3 cloves garlic

  • 1/4 lb. (125 g.) tender beef (sliced into small pieces)

  • 3 large potatoes (peeled, sliced, seasoned & fried)

  • 1/2 cup sliced fried onions

  • 2 sprigs daun sup/Chinese celery (chopped)

  • 3 half-ripe tomatoes (cubed)

  • 2 teaspoons ground pepper

Serves 4-6


Method:

  1. Put bones in the water. Add spices and salt. Simmer on low heat for 1 1/2 hours. Strain and discard spices. Put bones back in stock.

  2. Heat oil. Stir-fry pounded mixture till golden. Add meat slices. Fry till well coated. Add a little stock. Remove from flame.

  3. Add meat-mixture to the stock. Bring to the boil.

  4. Add potatoes. Simmer 15-20 minutes, till cooked. Adjust seasoning.

  5. Turn off heat. Add remaining ingredients. Leave covered till time to serve. Serve hot.
