Asian Meats Recipes - Indonesian Meat in Soy Sauce (Dendeng Kicap) Recipe

Ingredients

  • 1lb. (500 g.) beef (thinly sliced)

  • 3 pieces asam gelugur/dried tamarind slices

  • salt to taste

  • 2 slices ginger root

  • 1 1/2 cups boiling water

  • 4 tablespoons cooking oil

  • 4 cloves garlic (thinly sliced)

  • 3 big onions (sliced)

  • 1 big green tomato (thickly sliced)

  • 1/4 lb. (125 g.) local tomatoes (thickly sliced)

  • 4 green chilies and 3 red chilies seeded & sliced slantwise

  • 1 tablespoon kicap asin/light soy sauce

  • 2 tablespoons kicap manis/thick soy sauce

Serves 4


Method:

  1. Mix together the meat, tamarind slices, salt and ginger. Add to boiling water and cook slowly till meat is tender.

  2. Remove meat from stock. Strain and reserve stock. Heat oil and fry meat till crisp. Keep aside.

  3. Add garlic and onions to same oil. Fry till lightly golden.

  4. Add all the tomatoes and chilies. Stir and cook for a minute.

  5. Pour in reserved stock. Add soy sauces and fried meat. Bring to the boil.

  6. Adjust seasoning and remove from flame. Serve hot with boiled white rice.
