Meat Stewed in Coconut Milk (Daging Bersengek) Recipe
Ingredients
-
1lb. (500 g.) beef
(cut into convenient pieces)
-
1-inch (2.5-cm.) piece laos/galangal (lightly crushed)
-
1 stalk serai/lemon
grass (crushed)
-
4 daun salam/1
bay leaf
-
3 tablespoons cooking
oil
-
1 1/2 cups thin santan/thin
coconut milk
-
1 cup pati santan/coconut
cream
-
salt to taste
-
1 dessertspoon
tamarind paste and
1/4 cup water, mixed & strained to extract
juice
Ground Ingredients:
-
10 shallots
-
5 cloves garlic
-
4 red chilies
-
1-inch (2.5-cm.) piece kunyit/turmeric root
-
1 dessertspoon
ketumbar/coriander seeds
-
1-inch (2.5-cm.) piece terasi/dried shrimp paste
-
4 buah keras/candlenuts
Serves 4
Method:
-
Season well the meat with the ground ingredients,
galangal, lemon grass and salam or bay leaves.
-
Heat oil and stir fry meat mixture for 5 minutes.
-
Add thin coconut milk. Cook till meat is tender. Add
coconut cream and salt to taste. Stir till the oil
separates.
-
Discard salam or bay leaves, galangal
and lemon grass or serai.
-
Mix tamarind juice into
gravy. Remove from flame.
-
Serve hot with boiled
white rice, vegetables and a sambal.
