Meat Wrapped in Banana Leaves (Bungkusan Daging) Recipe
Ingredients

1lb. (500 g.) minced
meat
-
3/4 cup pati santan/coconut
cream mixed with 1/2 teaspoon salt
-
2 eggs,
salt and pepper, to
taste beaten together
-
steamed banana
leaves/daun pisang (to wrap)
-
a few daun salam/bay
leaves
-
daun pandan/Screw pine
leaves (cut into small squares)
Ground Ingredients:
-
4 shallots
-
2 cloves garlic
-
2 red chilies
-
2 green chilies
-
1-inch (2.5-cm.) piece
laos/galangal
-
3 buah keras/candlenuts
-
1 teaspoon ketumbar/ground
coriander
-
1/4 teaspoon jintan
putih/white cummin
-
1/2 teaspoon salt
Serves 6
Method:
-
Dry fried the candlenuts, ground
coriander, white cumin and salt and ground.
-
Mix minced meat with the ground ingredients and
coconut cream. Bind mixture with beaten egg.

Spread a little of the mixture on
pieces of banana leaf. Place a daun salam on
this, then divide the rest of the mixture equally
into each pack.

Top mixture with a piece of screw pine leaf. Wrap neatly and secure with
toothpicks.

Steam for 20 minutes. Serve
unwrapped, with chili and tomato sauce.
