Mutton Curry (Gulai Bagar) Recipe
Ingredients
-
1/2 cup margarine
-
5 small onions
(sliced)
-
1lb. (500 g.) mutton
(cut into small pieces)
-
1/2 lb. (250 g.) terung/brinjals
or aubergines (sliced slantwise to
1/2.inch/1.2.cm. thickness)
-
2 1/2 cups thick santan/thick
coconut milk
-
salt to taste
Spice Ingredients:
-
2 dessertspoons
ketumbar/coriander seeds (dry-fried & ground)
-
2 teaspoons jintan
putih/white cummin seeds
-
1 teaspoon buah kepulaga/cardamoms
-
2-inch (5-cm.) piece kayu manis/cinnamon stick
-
3 bunga cengkih/cloves
-
1 teaspoon adas/fennel
-
1 teaspoon ground
white pepper
Ground Ingredients:
Serves 4-6
Method:
-
Melt margarine on medium heat. Add spice ingredients
and stir 2-3 minutes.

Add onions and cook for 1
minute. Add ground ingredients. Stir-fry 2 minutes.

Add the mutton and stir till the oil separates.
-
Add brinjals and coconut milk. Season to taste.
Simmer on low heat for 15-20 minutes. Stir now and
then.

When the meat is tender and the gravy is
thick, adjust seasoning. Remove from flame.

Serve
hot with boiled white rice or bread.
