Asian Meats Recipes - Indonesian Mutton Curry (Gulai Bagar) Recipe

Ingredients

  • 1/2 cup margarine

  • 5 small onions (sliced)

  • 1lb. (500 g.) mutton (cut into small pieces)

  • 1/2 lb. (250 g.) terung/brinjals or aubergines (sliced slantwise to 1/2.inch/1.2.cm. thickness)

  • 2 1/2 cups thick santan/thick coconut milk

  • salt to taste

Spice Ingredients:

  • 2 dessertspoons ketumbar/coriander seeds (dry-fried & ground)

  • 2 teaspoons jintan putih/white cummin seeds

  • 1 teaspoon buah kepulaga/cardamoms

  • 2-inch (5-cm.) piece kayu manis/cinnamon stick

  • 3 bunga cengkih/cloves

  • 1 teaspoon adas/fennel

  • 1 teaspoon ground white pepper

Ground Ingredients:

  • 6-8 red chilies

  • 3 cloves garlic

  • 2-3 slices ginger root

  • 2-inch (5-cm.) piece kunyit/turmeric root

  • 3 buah keras/candlenuts

Serves 4-6


Method:

  1. Melt margarine on medium heat. Add spice ingredients and stir 2-3 minutes.

  2. Add onions and cook for 1 minute. Add ground ingredients. Stir-fry 2 minutes.

  3. Add the mutton and stir till the oil separates.

  4. Add brinjals and coconut milk.  Season to taste. Simmer on low heat for 15-20 minutes. Stir now and then.

  5. When the meat is tender and the gravy is thick, adjust seasoning. Remove from flame.

  6. Serve hot with boiled white rice or bread.
