Asian Meats Recipes - Indonesian Skewered Meat with
Sweet Sauce
(Sate Manis) Recipe
Ingredients
Marinade
Ingredients: (mixed together)

3 cloves garlic
(chopped)

1 teaspoon jintan
putih/white cumin (ground)

1/4 teaspoon ketumbar/ground
coriander
-
4 tablespoons kicap
manis/ dark soy sauce
-
a good pinch of salt
-
1 tablespoon brown
sugar
-
1/2 teaspoon kicap asin/light
soy sauce
-
1 tablespoon cooking
oil
Sauce Ingredients:
-
1 1/2 tablespoons oil
-
1/4 lb. (125 g.)
roasted, unsalted peanuts (skinned & ground)
-
2 red chilies (seeded
& ground)
-
1/4 teaspoon dried
shrimp paste
-
3 cloves garlic
(minced)
-
6 shallots (minced)
-
1/4 teaspoon laos/ground
galangal
-
1 tablespoon gula Jawa/palm
sugar
-
2 1/2tablespoons lemon
juice
-
11h cups thick santan/thick
coconut milk
-
salt to taste
Serves 4
Method:
-
Marinate pork cubes for 3 hours.
-
Thread each bamboo skewer with 5-6 pieces of
meat. Place skewered meat under a hot grill, and
grill meat till tender. Baste constantly with
marinade,
and turn skewers every 15 minutes.

Transfer
sate to a serving plate when cooked.

To prepare
sauce. Heat 1/2 tablespoons oil in a pan. Stir-Cry
garlic and shallots till fragrant but not browned.

Add the rest of the sauce ingredients, except
coconut milk. Fry over medium heat for 10 minutes.

Pour in coconut milk, turn heat to low and simmer
uncovered till sauce is smooth and thick, stirring
frequently.

Pour sauce into individual bowls and
serve with the sate. Serve sate hot.
