Spiced Skewered Meat without Sauce (Sate Bumbu) Recipe
Ingredients

cooking oil
-
1 1/4 lb. (625 g.) lean
steak (cut into 1-in./2.5-cm. squares, 1/4-in./0.6-cm. thick)
-
2/3 cup thick santan/thick
coconut milk
-
1 stalk serai/lemon
grass (bruised)
-
2 daun salam/1
dried bay leaf
-
1/2 tablespoon gula
Jawa/palm sugar
-
bamboo skewers (soaked
in cold water)
Marinade
Ingredients:
-
1 onion (chopped)
-
1 clove garlic
(chopped)
-
2 red chilies (seeded
& chopped)
-
2 tablespoons lemon
juice
-
1 teaspoon chopped
ginger root
-
1/4 teaspoon kunyit/ground
turmeric
-
1/4 teaspoon ground
peppercorns
-
1 teaspoon ketumbar/ground
coriander
-
1/4 teaspoon jintan
putih/ground cummin
-
1/4 teaspoon terasi/dried
shrimp paste
Serves 4
Method:
-
Blend together the onion, garlic,
red chilies with the lemon juice and set aside.
-
Heat 2 tablespoons oil in a pan. Stir-fry marinade
mixture till it leaves the sides of the pan.
-
Add
meat slices and stir till color of meat changes.
-
Pour in coconut milk and add lemon grass, salam or
bay leaves and palm sugar. Simmer uncovered, over
low heat, till almost dry, stirring frequently.

Remove meat from heat and allow to cool.

Thread
meat onto skewers and place under a preheated hot
grill. Grill till meat is lightly browned.

Remove from grill, garnish and serve with boiled
white rice.
