Asian Poultry Recipes - Indonesian Bahgana Chicken Dish (Ayam Bahgana)  Recipe

Ingredients

  • 1 chicken (3 lb./1 1/2 kg.) (cleaned)

  • 4 tablespoons coconut/cooking oil

  • 2 1/2 cups santan/coconut milk

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1 stalk serai/lemon grass (crushed)

  • 7 daun salam/3 bay leaves

  • salt to taste

  • 4 oz. (125 g.) red beans (boiled till tender & drained)

  • cooked rice (to serve)

  • fried onion flakes (to garnish)

Ground Ingredients:

  • 1 tablespoon ketumbar/coriander seeds

  • 4 buah keras/candlenuts

  • 2-inch (5-cm.) piece kunyit/turmeric root

  • 8 red chilies

  • 12 shallots

  • 5 cloves garlic                                                                 

  • 1/2-inch (1.2-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 2 teaspoons gula Jawa/palm sugar

Serves 4


Method:

  1. Cut chicken into convenient pieces and crush lightly with a pestle.

  2. Heat oil and stir-fry ground ingredients till golden.

  3. Add coconut milk, galangal, lemon grass and salam or bay leaves. Season to taste. Bring to the boil.

  4. Add chicken-pieces. Stir-cook till chicken is done and the gravy is very thick.

  5. Mix in red beans. Adjust seasoning and remove from heat.

  6. Serve hot, on a bed of boiled white rice. Garnish with fried onions.
