Indonesian Chicken Grilled with Coconut Milk (Ayam
Panggang Santan) Recipe
Ingredients

1 chicken (3 lb./1
1/2
kg.) (cleaned & halved)
-
8 daun salam/3 bay leaves
-
1-inch (2.5-cm.) piece laos/galangal (crushed)
-
1 stalk serai/lemon grass
(crushed)
-
2 cups thick santan/thick
coconut milk
-
salt to taste
-
1 dessertspoon
tamarind paste and 4 tablespoons water,
mixed & strained to extract juice
Ground Ingredients:
-
2 teaspoons ketumbar/coriander
seeds
-
1/2 teaspoon jintan
putih/white cumin seeds
-
5 buah keras/candlenuts
-
2 teaspoons sugar
-
18 shallots
-
5 cloves garlic
-
1-inch (2.5-cm.)
piece terasi/dried shrimp paste (dry-fried)
Serves 4-6
Method:
-
Lightly grill
chicken, then crush it with a pestle.
-
Combine
remaining ingredients in a saucepan. Stir-cook on
medium flame till almost dry.
-
Adjust seasoning.
Remove from flame. Discard salam or bay leaves,
galangal and lemon grass.
-
Cover the chicken with
the cooked mixture. Grill till cooked and tender.
-
Garnish and serve hot with boiled white rice.
