Asian Poultry Recipes - Indonesian Chicken Grilled with Coconut Milk (Ayam Panggang Santan) Recipe

Ingredients

  • 1 chicken (3 lb./1 1/2 kg.) (cleaned & halved)

  • 8 daun salam/3 bay leaves

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1 stalk serai/lemon grass (crushed)

  • 2 cups thick santan/thick coconut milk

  • salt to taste

  • 1 dessertspoon tamarind paste and 4 tablespoons water, mixed & strained to extract juice

Ground Ingredients:

  • 2 teaspoons ketumbar/coriander seeds

  • 1/2 teaspoon jintan putih/white cumin seeds

  • 5 buah keras/candlenuts

  • 2 teaspoons sugar

  • 18 shallots

  • 5 cloves garlic

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

Serves 4-6


Method:

  1. Lightly grill chicken, then crush it with a pestle.

  2. Combine remaining ingredients in a saucepan. Stir-cook on medium flame till almost dry.

  3. Adjust seasoning. Remove from flame. Discard salam or bay leaves, galangal and lemon grass.

  4. Cover the chicken with the cooked mixture. Grill till cooked and tender.

  5. Garnish and serve hot with boiled white rice.
