Asian Poultry Recipes - Indonesian Chicken Soup
(Soto Ayam) Recipe
Ingredients
-
1 chicken (3 lb./Ph
kg.) (cleaned & cut into small pieces)
-
12 1/2 cups boiling
water
-
8 shallots (finely
sliced, fried & ground)
-
salt & pepper to
taste
-
1.inch (2.5-cm.)
piece ginger root (crushed)
-
4 daun salam/2 bay
leaves
-
1 tablespoon kicap
asin/light soy sauce
-
4 oz. (125 g.) rice
vermicelli (blanched & drained)
-
3 oz. (90 g.) tauge/beansprouts
(tailed)
-
2 tablespoons fried
onion flakes
-
2 stalks daun
sup/Chinese celery (chopped)
-
2 red chilies
(seeded & finely sliced)
-
kicap manis/dark soy
sauce (to accompany)
Serves 4-6
Method:
-
Add chicken to boiling water. Boil for 3 minutes,
then reduce heat.
-
Add ground shallots and simmer
till chicken is tender.
-
Add salt, pepper, ginger, salam or bay leaves and soy sauce. Simmer till soup
is wellflavoured. Adjust seasoning.
-
To serve.
Place individual helpings of noodles in soup-plates.
Top with beansprouts, onion flakes and celery.

Ladle soup over. Serve immediately, with
chilies
and soy sauce in separate dishes.
