Asian Poultry Recipes - Indonesian Chicken Soup (Soto Ayam)  Recipe

Ingredients

  • 1 chicken (3 lb./Ph kg.) (cleaned & cut into small pieces)

  • 12 1/2 cups boiling water

  • 8 shallots (finely sliced, fried & ground)

  • salt & pepper to taste

  • 1.inch (2.5-cm.) piece ginger root (crushed)

  • 4 daun salam/2 bay leaves

  • 1 tablespoon kicap asin/light soy sauce

  • 4 oz. (125 g.) rice vermicelli (blanched & drained)

  • 3 oz. (90 g.) tauge/beansprouts (tailed)

  • 2 tablespoons fried onion flakes

  • 2 stalks daun sup/Chinese celery (chopped)

  • 2 red chilies (seeded & finely sliced)

  • kicap manis/dark soy sauce (to accompany)

Serves 4-6


Method:

  1. Add chicken to boiling water. Boil for 3 minutes, then reduce heat.

  2. Add ground shallots and simmer till chicken is tender.

  3. Add salt, pepper, ginger, salam or bay leaves and soy sauce. Simmer till soup is well­flavoured. Adjust seasoning.

  4. To serve. Place individual helpings of noodles in soup-plates. Top with beansprouts, onion flakes and celery.

  5. Ladle soup over. Serve immediately, with chilies and soy sauce in separate dishes.
