Asian Poultry Recipes - Indonesian Curried Chicken (Ayam Kelia)  Recipe

Ingredients

  • 1 chicken (3lb./1 1/2 kg.) (cleaned & grilled whole)

  • 3 tablespoons cooking oil

  • 1 stalk serai/lemon grass (crushed)

  • 4 dessertspoons fried onion flakes

  • 2 cups santan/coconut milk

  • salt to taste

  • 3 pieces asam gelugur/dried tamarind slices

Ground Ingredients:

  • 2-3 red chilies                                                

  • 1.inch (2.5 cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1/2 dessertspoon ketumbar/coriander seeds

  • 1 teaspoon sugar

  • 1/2 teaspoon jintan putih/white cumin seeds

  • 3 buah keras/candlenuts

  • 1.inch (2.5-cm.) piece ginger root

  • 2 teaspoons fine pepper

Serves 4


Method:

  1. Cut grilled chicken into convenient pieces.

  2. Heat oil and stir-fry ground ingredients. Add lemon grass, onion flakes and coconut milk.

  3. Add chicken pieces, salt to taste and dried tamarind slices. Simmer on medium heat till dry.

  4. Discard lemon grass. Serve hot with boiled white rice and other dishes.
