 Indonesian Duck Curry (Gulai Bebek) Recipe


  • 1 duck (3lb./11f2 kg.) (cleaned & singed)

  • 5 tablespoons cooking oil

  • 1.inch (2.5-cm) piece laos/galangal (crushed)

  • 1 stalk serai/lemon grass (crushed)

  • 5 tablespoons ground green chilies

  • 3 tablespoons juice of jeruk nipis/lime

  • 1 1/2 cups water

  • salt to taste

Ground Ingredients:

  • 3 onions (sliced)

  • 5 cloves garlic

  • 5 buah keras/candlenuts

  • 1.inch (2.5-cm.) cube ginger root

  • 1 teaspoon white peppercorns

Serves 4


  1. Mixed together the the green chilies, lime and water and set aside.

  2. Cut the duck into fairly large pieces.

  3. Heat oil. Stir-fry ground ingredients, galangal and lemon grass 4-5 minutes.

  4. Add chili mixture and fry further till mixture is aromatic.

  5. Add duck-pieces and stir well to coat in fried mixture.

  6. Add water and salt to taste. Simmer till duck is tender and oil separates.

  7. Remove from flame. Discard galangal and lemon grass. Serve hot with boiled white rice.
