Asian Poultry Recipes - Indonesian Fried Chicken Java-Style (Ayam Goreng Jawa)  Recipe

Ingredients

  • 1 chicken (5-6lb/2 1/2-3 kg.) (cleaned & cut into convenient pieces)

  • 1 1/2 cups santan/coconut milk

  • 1 dessertspoon tamarind paste and 4 tablespoons water (mixed & strained  to extract juice)

  • salt to taste

  • cooking oil for deep frying

Ground Ingredients:

  • 2 red chilies (seeded)

  • 12 shallots

  • 2 teaspoons ketumbar/coriander seeds

  • 2 teaspoons gula Jawa/palm sugar

  • 1 stalk serai/lemon grass

  • 1-inch (2.5-cm.) piece laos/galangal

  • 2 buah keras/candlenuts

  • 1-inch (2.5-cm.) piece kunyit/turmeric root

Serves 4-6


Method:

  1. In a pan, mix together all ingredients except the cooking oil for deep-frying.

  2. Simmer till chicken is tender and dry. Remove from flame.

  3. Heat oil to cooking point. Deep-fry cooked chicken till golden brown and drain well.

  4. Serve with boiled white rice.
