Java-Style (Ayam Goreng Jawa) Recipe
Ingredients

1 chicken (5-6lb/2
1/2-3
kg.) (cleaned & cut into convenient pieces)

1 1/2
cups santan/coconut milk
-
1 dessertspoon tamarind
paste and 4 tablespoons
water (mixed & strained to extract juice)
-
salt to taste
-
cooking oil for deep
frying
Ground Ingredients:
-
2 red chilies
(seeded)
-
12 shallots
-
2 teaspoons ketumbar/coriander
seeds
-
2 teaspoons gula Jawa/palm
sugar
-
1 stalk serai/lemon
grass
-
1-inch (2.5-cm.) piece
laos/galangal
-
2 buah keras/candlenuts
-
1-inch (2.5-cm.) piece kunyit/turmeric root
Serves 4-6
Method:
-
In a pan, mix together all ingredients except the
cooking oil for deep-frying.

Simmer till chicken
is tender and dry. Remove from flame.
-
Heat oil to cooking point. Deep-fry cooked chicken
till golden brown and drain well.
-
Serve with
boiled white rice.
