Asian Poultry Recipes - Indonesian Green-cooked Duck (Bebek Hijau)  Recipe

Ingredients

  • 1 duck (3 lb./1 1/2 kg.) (cleaned & lightly grilled)

  • 1 cup cooking oil

  • 10 shallots (finely sliced)

  • 2 cloves garlic (finely sliced)

  • 1 cup ground green chilies

  • 1 stalk serai/lemon grass (crushed)

  • salt to taste

  • 1 daun kunyit/turmeric leaves

  • 3-4 daun jeruk purut/curly lime leaves

  • 1 cup hot water

  • 2 tablespoons lime juice

Ground Ingredients:

  • 10 buah keras/candlenuts

  • 1 1/2-inch. (4-cm.) piece young ginger root

  • 1-inch (2.5 cm.) piece laos/galangal

  • 1-inch (2.5.cm.) piece kunyit/turmeric

  • 2 teaspoons white peppercorns

Serves 4-6


Method:

  1. Cut duck into convenient pieces.

  2. Heat oil on medium flame. Fry shallots and garlic till golden brown.

  3. Add ground chilies, then stir in ground ingredients.

  4. Cook for 5 minutes, then add duck, lemon grass, salt and both leaves.

  5. Reduce heat to low and simmer covered, till duck is half-done.

  6. Add hot water and lime juice. Continue cooking till duck is tender and gravy is thick.

  7. Dish up and serve hot or cold with boiled white rice.
