Asian Poultry Recipes - Indonesian Grilled Chicken in Gravy (Ayam Pecel) Recipe

Ingredients

  • 1 chicken (3 lb./1 1/2 kg.) (cleaned & halved)

  • 2 onions (finely sliced)

  • 1/4 cup lime juice

  • salt to taste

  • 2 1/2 cups thick santan/thick coconut milk

  • 2 oz. (60 g.) daun kemangi/basil leaves (shredded)

Ground Ingredients:

  • 4 buah keras/candlenuts (dry-fried)

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 slice ginger root

  • 5 red chilies

Serves 4-6


Method:

  1. Grill chicken till cooked. Lightly crush with a pestle.

  2. Add all ingredients, except basil leaves, to coconut milk. Blend well and adjust seasoning.

  3. Place chicken in a serving dish. Pour santan mixture over. Sprinkle basil leaves on top.

  4. Serve hot.
