Skewers
(Sate Ayam) Recipe
Ingredients

1 chicken (3lb./1
1/2
kg.) (cleaned & boned) skewers
-
2 tablespoons cooking
oil
-
4-5 tablespoons hot
water
-
1 tablespoon kicap
manis/dark soy sauce
-
3 tablespoons melted fat
-
lime-halves

Ingredients:

3 red chilies
(steamed)
-
10 tablespoons
peanuts (fried & skinned)
-
1 tablespoon brown sugar
-
3 lombok rawit/bird
chilies
-
2 tablespoons
shallots
-
5 buah keras/candlenuts
(dry-fried)

1 tablespoon salt
Serves 4
Method:
-
Cut chicken-meat into small, thin pieces. Skewer
them, five pieces onto each skewer, alternating with
pieces of fat (if any). Melt excess fat for basting.

Heat oil and fry pounded ingredients till the oil
separates.
-
Stir in water and bring to the boil.
Reduce heat and simmer till thick. Remove from
flame.

Mix 3 tablespoons of cooked mixture with
dark soy sauce and 3 tablespoons melted fat.

Marinate skewered meat in this for at least 5 hours.

Grill skewered meat slowly, basting often with
the left over marinade.

When done, serve with
remaining marinade and lime-halves.
