Asian Poultry Recipes - Indonesian Grilled Spicy Chicken (Ayam Panggang Bumbu Sengek)  Recipe

Ingredients

  • 1 chicken (5-6 lb./2 1/2-3 kg.) (cleaned)

  • 2 tablespoons coconut/cooking oil

  • 1 stalk serai/lemon grass (crushed)

  • 2 cups santan/coconut milk

  • salt to taste

  • 2 tablespoons juice of jeruk nipis/lime coriander leaves (to garnish)

Ground Ingredients:

  • 3 red chilies

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 teaspoon sugar

  • 3 onions (sliced)

  • 3 cloves garlic

  • 2 teaspoons ketumbar/coriander seeds

  • 4 buah keras/candlenuts

  • 1-inch (2.5-cm.) piece kunyit/turmeric root

  • 1-inch (2.5-cm.) piece laos/galangal

Serves 4-6


Method:

  1. Split chicken through the breast till spread eagled.

  2. Heat oil and stir-fry ground ingredients and lemon grass till aromatic.

  3. Add coconut milk and bring to the boil, stirring.

  4. Add chicken and salt to taste. Reduce heat to low.

  5. Cook covered, till chicken is tender and the oil separates. Turn over now and again.

  6. Stir in lime juice. Remove chicken to a hot grill and grill till golden brown. Baste with the gravy often.

  7. Serve hot, garnished with sprigs of coriander.
