Asian Poultry Recipes - Indonesian Hot and Tangy Chicken (Ayam Asam Pedas)  Recipe

Ingredients

  • 1/2 chicken (cut into 4 pieces)

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1 stalk spring onion (finely sliced)

  • salt to taste

  • 1/2 cups water

  • juice of 1 jeruk nipis/lime

Ground Ingredients:

  • 6 red chilies

  • 9 shallots

Serves 2-3


Method:

  1. Combine all ingredients, except lime juice, in a saucepan. Cook slowly till chicken is tender.

  2. Stir in lime juice. Adjust seasoning. Remove from heat.

  3. Garnish and serve hot with boiled white rice.
