Asian Poultry Recipes - Javanese Chicken Curry
(Pindang Serani) Recipe
Ingredients

1 chicken (3lb./1
1/2
kg.) (cleaned)

3 tablespoons cooking
oil
-
1 stalk serai/lemon
grass
-
2 cups chicken stock
-
salt to taste
-
8 blimbing masam/finger
carambola or sour pickles (split)

juice of 1 ripe jeruk
nipis/lime
Ground Ingredients:
Serves 4-6
Method:

Cut chicken into
convenient serving pieces.

Heat oil and stir-fry
ground ingredients and lemon grass till mixture is
golden and aromatic.

Add stock and bring to boil.
Add chicken pieces and season to taste.

Simmer
till chicken is half-cooked, then add caram bola.
-
Simmer till chicken is tender and gravy is thick.
Add lime juice.
-
Adjust seasoning. Remove from
heat. Serve hot with boiled white rice.
