Asian Poultry Recipes - Javanese Chicken Curry (Pindang Serani)  Recipe

Ingredients

  • 1 chicken (3lb./1 1/2 kg.) (cleaned)

  • 3 tablespoons cooking oil

  • 1 stalk serai/lemon grass

  • 2 cups chicken stock

  • salt to taste

  • 8 blimbing masam/finger carambola or sour pickles (split)

  • juice of 1 ripe jeruk nipis/lime

Ground Ingredients:

  • 15 shallots

  • 2 cloves garlic

  • 3 red chilies

  • 1 slice laos/galangal

  • 3 slices kunyit/turmeric root (dry-fried)

Serves 4-6


Method:

  1. Cut chicken into convenient serving pieces.

  2. Heat oil and stir-fry ground ingredients and lemon grass till mixture is golden and aromatic.

  3. Add stock and bring to boil. Add chicken pieces and season to taste.

  4. Simmer till chicken is half-cooked, then add caram bola.

  5. Simmer till chicken is tender and gravy is thick. Add lime juice.

  6. Adjust seasoning. Remove from heat. Serve hot with boiled white rice.
