Asian Poultry Recipes - Indonesian Roast Chicken (Ayam Panggang)  Recipe

Ingredients

  • 1 chicken (4-5 lb./2-2 1/2 kg.) (cleaned & halved)

  • 2 tablespoons kicap asin/light soy sauce

  • 3 tablespoons juice of jeruk nipis/lime

  • 2 teaspoons kunyit/ground tumeric

  • salt to taste

  • 2 dessertspoons butter

Ground Ingredients:

  • 4 red chilies

  • 4 lombok rawit/bird chilies

  • 1 clove garlic

  • 1 teaspoon white peppercorns

  • 1 teaspoon sugar

Serves 4


Method:

  1. Grill the chicken gently over or under low heat till almost golden.

  2. Mix together the ground ingredients, soy sauce and lime juice.

  3. Blend in turmeric and add salt to taste. Season the chicken with the mixture.

  4. Grill the chicken again, basting with remain­ing seasoning mixture.

  5. When done, remove from heat. Brush over with butter.

  6. Serve hot or cold, garnished as desired.
