Asian Poultry Recipes - Indonesian Stewed Chicken
(Opor Ayam) Recipe
Ingredients

3 lb. (Ph kg.) chicken
(cut into bite-sized pieces)

1 teaspoon chopped serai/lemon grass
-
2 daun salam/1 bay
leaf

1 onion (chopped)
-
2 cloves garlic
(chopped)

1-inch (2.5-cm.) piece kayu manis/cinnamon stick
-
3 3/4 cups thick santan/thick
coconut milk
-
oil for deep-frying
Marinade
Ingredients: (All mixed together)
-
4 buah keras/candlenuts
(chopped finely)

1/2 teaspoon jintan
putih/white cumin powder
-
1 1/2 teaspoons ketumbar/ground coriander
-
1 teaspoon minced
ginger root
-
1/2 teaspoon ground
black peppercorns
Seasoning
Ingredients:
Serves 4-5
Method:
-
Marinate chicken pieces for 30 minutes.

Heat oil
for deep-frying. Fry chicken piece quickly for 3-5
minutes. Drain out and set aside.

Heat 2
tablespoons of oil in a large saucepan. Sauté
onion, garlic, lemon grass and salam or bay leaves
till fragrant and onion is soft.

Add chicken
pieces together with the marinade, cinnamon stick
and seasoning ingredients, except lemon juice. Mix
well.

Pour in coconut milk and lower heat to
medium. Simmer uncovered, till chicken is tender and
gravy is thick, stirring constantly.

Stir in
lemon juice, dish up and serve.
