Asian Poultry Recipes - Indonesian Tamarind-Flavored
Chicken
(Ayam Keri) Recipe
Ingredients

1 chicken (4 lb./2
kg.) (cleaned & lightly grilled)
-
4 tablespoons
cooking oil
-
2 daun kunyit/turmeric
leaves
-
1 stalk serai/lemon
grass (crushed)
-
2 1/2 cups san tan/coconut
milk
-
salt to taste
-
1 dessertspoon
tamarind paste and
4 tablespoons
water (mixed & strained to extract juice)
Ground Ingredients:
-
2 level dessertspoons
ketumbar/coriander seeds
-
1 teaspoon jintan
putih/white cumin seeds
-
5 buah keras/candlenuts
-
7 red chilies
-
6 shallots
-
2 cloves garlic
-
1-inch (2.5-cm.)
piece laos/galangal
-
1-inch (2.5-cm.)
piece kunyit/turmeric root
-
1.inch (2.5-cm.)
piece terasi/dried shrimp paste (dry-fried)
Serves 4-6
Method:
-
Cut the chicken into convenient pieces.
-
Heat oil.
Stir-fry ground ingredients, turmeric leaves and
lemon grass till aromatic.
-
Add chicken and stir
well to coat in fried mixture.
-
Add santan and
simmer till chicken is done, stirring frequently.
Season to taste.

Stir in tamarind juice and
simmer further till oil separates. Remove from
flame. Discard turmeric leaves and lemon grass.

Serve with boiled white rice.
