Asian Rice, Noodles and Snacks Recipes - Indonesian Bahgana Rice (Nasi Bahgana) Recipe

Ingredients

  • 2 tablespoons cooking oil

  • 2 shallots (chopped)

  • 1 clove garlic (chopped)

  • 1 teaspoon jintan putih/white cumin seeds

  • 1 1/2 lb. (750 g.) rice (washed & drained)

  • a pinch of salt

  • 5 cups boiling water

  • 1/2 cup fried onion flakes

Serves 4-6


Method:

  1. Heat oil and fry shallots, garlic and cumin seeds till lightly browned. Reduce heat.

  2. Mix in rice, salt and water. Bring to the boil.

  3. Reduce heat and cook slowly till nearly done.

  4. Place an asbestos mat under the pan. Cook covered, on low heat, till rice is done.

  5. To serve. Place a layer of rice on a serving plate. Cover with a layer of Ayam Bahgana and gravy. Repeat, ending with rice. Top with fried onion flakes. Serve hot.
