Bahgana Rice
(Nasi Bahgana) Recipe
Ingredients
-
2 tablespoons cooking
oil
-
2 shallots (chopped)
-
1 clove garlic
(chopped)
-
1 teaspoon jintan
putih/white cumin seeds
-
1 1/2 lb. (750 g.) rice
(washed & drained)
-
a pinch of salt
-
5 cups boiling water
-
1/2 cup fried onion
flakes
Serves 4-6
Method:
-
Heat oil and fry shallots, garlic and
cumin seeds till
lightly browned. Reduce heat.
-
Mix in rice, salt and
water. Bring to the boil.
-
Reduce heat and cook slowly
till nearly done.
-
Place an asbestos mat under the
pan. Cook covered, on low heat, till rice is done.
-
To serve. Place a layer of rice on a serving plate.
Cover with a layer of Ayam Bahgana and gravy. Repeat,
ending with rice. Top with fried onion flakes. Serve
hot.
