Asian Rice, Noodles and Snacks Recipes - Indonesian Beansprouts and Prawn Fritters (Bakwan Taoge) Recipe

Ingredients

  • 1/4 lb. (125 g.) medium prawns (remove heads & devein)

  • 1/4 lb. (125 g.) flour (sifted)

  • 2 eggs

  • 1/4 cup santan/coconut milk

  • 1/4 teaspoon bicarbonate of soda

  • salt and monosodium glutamate, to taste

  • 1lb. (500 g.) taoge/bean sprouts (tailed)

  • cooking oil for deep-frying

  • chili and tomato sauce

Serves6-8


Method:

  1. Make a smooth batter with the flour, eggs, coconut milk and bicarbonate of soda. Season to taste. Mix in bean sprouts.

  2. Heat oil for deep-frying. Place a soup-ladle in it. When hot, take it out and fill with bean-sprout-mixture.

  3. Place a few prawns on top and lower the ladle into the hot oil. As fritter starts to set, shake the ladle to loosen the fritter. Slip out into the oil and continue frying till golden brown.

  4. Drain out fritter and drain well. Repeat procedure, to use up all the batter and prawns.

  5. Garnish with cucumber if liked. Serve hot with chili and tomato sauce.
