Asian Rice, Noodles and Snacks Recipes - Indonesian Black Pulut Sweet (Bubur Ketan Hitam) Recipe

Ingredients

  • 1 cup ketan hitam/black glutinous rice (washed & drained)

  • 5 cups water or thin coconut milk

  • 3 daun pandan/Screw pine leaves

  • 3/4 cup sugar or 1 cup gula Jawa/palm sugar

  • 2 cups thick santan/thick coconut milk

  • salt to taste

Serves 3-4


Method:

  1. Boil glutinous rice in the water or thin coconut milk till half-cooked.

  2. Add Screw pine leaves. Simmer till glutinous rice is cooked, adding more water if necessary. Add sugar. Simmer till glutinous rice is soft.

  3. Remove from heat. Discard leaves. Dish up into individual bowls.

  4. Season coconut milk with salt to taste. Bring to the boil, stirring. Remove from flame. Dish up.

  5. Serve hot coconut milk with the cooked glutinous rice.
