Asian Rice, Noodles and Snacks Recipes - Indonesian Chicken and Prawn Pies (Pangsit) Recipe

Ingredients

  • cooking oil for deep-frying

  • whole lettuce leaves chili/tomato/soy sauce, to serve

Filling Ingredients:

  • 1/2 lb. (250 g.) chicken meat (minced)

  • 1/4 lb. (125 g.) prawns (shelled, deveined & minced)

  • 2 tablespoons cooking oil

  • 1 clove garlic, pounded

  • 1 red chili, pounded                                              

  • 4 shallots, pounded                                

  • 1 slice ginger root, pounded

  • salt to taste

  • 1 tablespoon kicap asin/light soy sauce

Pastry Ingredients:

  • 10 oz. (315 g.) flour (sifted)

  • 2 eggs

  • salt to taste

  • cold water, to bind

Serves 4


Method:

  1. To prepare filling. Heat oil on medium flame. Mix together all the filling ingredients. Add to oil and stir-fry till cooked. Remove from flame. Let stand to cool.

  2. To prepare pastry. Mix together all the ingre­dients to form a smooth, soft dough. Knead well. Leave covered for 1h hour.

  3. Roll out dough into a thin sheet. Cut into equal-sized squares. Divide filling among them. Fold over and seal edges with a little water.

  4. Heat oil for deep-frying. Fry pies till golden brown and crisp. Drain well.

  5. Dish up and garnish with lettuce. Serve hot with sauce.
