Chicken and Prawn Pies (Pangsit) Recipe
Ingredients
Filling Ingredients:

1/2 lb. (250 g.)
chicken meat (minced)

1/4 lb. (125 g.) prawns
(shelled, deveined & minced)

2 tablespoons cooking
oil
-
1 clove garlic,
pounded
-
1 red chili,
pounded
-
4
shallots, pounded
-
1 slice ginger root,
pounded
-
salt to taste
-
1 tablespoon kicap
asin/light soy sauce
Pastry Ingredients:
Serves 4
Method:

To
prepare
filling. Heat oil on medium flame.
Mix together all the filling ingredients. Add to oil and
stir-fry till cooked. Remove from flame. Let stand to
cool.

To
prepare
pastry. Mix together all the ingredients to form a
smooth, soft dough. Knead well. Leave covered for 1h
hour.

Roll out dough into a thin sheet. Cut into
equal-sized squares. Divide filling among them. Fold
over and seal edges with a little water.

Heat oil for
deep-frying. Fry pies till golden brown and crisp. Drain
well.

Dish up and garnish with lettuce. Serve hot
with sauce.
