Indonesian Chicken Rice (Nasi Ayam) Recipe
Ingredients

1 chicken (2 lb./1
kg.) (cleaned & cut into convenient pieces)
-
3 3/4 cups thick santan/thick coconut milk
-
2 daun salam/1 bay
leaves
-
2 daun
pandan/Screw pine leaves
-
salt to taste
-
2 cups rice (washed &
drained)
-
1 tablespoon fried
shallot flakes
-
2 stalks daun
sup/Chinese celery
-
3 oz. (90 g.) peanuts
(fried & skinned)
Ground Ingredients:
-
6 shallots
-
1 clove garlic
-
1/2-inch (1.2-cm.)
piece terasi/dried shrimp paste (dry-fried)
-
1/2
teaspoon
ketumbar/coriander seeds
-
1 thin stalk
serai/lemon grass (sliced)
-
1 slice laos/galangal
-
3 buah
keras/candlenuts
Serves 4
Method:
-
Combine chicken,
ground ingredients, coconut milk, leaves and salt to
taste. Cook on medium flame till chicken is done.
Remove chicken and keep aside.
-
Add rice to the
coconut milk-mixture. Cook on medium flame till rice
is done.
-
Adjust seasoning. Discard leaves, remove and dish
up immediately.
-
Arrange chicken on the rice.
-
Garnish with
Chinese celery, peanuts and fried shallot flakes.
Serve hot.
