Asian Rice, Noodles and Snacks Recipes - Indonesian Chicken Rice (Nasi Ayam) Recipe

Ingredients

  • 1 chicken (2 lb./1 kg.) (cleaned & cut into convenient pieces)

  • 3 3/4 cups thick santan/thick coconut milk

  • 2 daun salam/1 bay leaves

  • 2 daun pandan/Screw pine leaves

  • salt to taste

  • 2 cups rice (washed & drained)

  • 1 tablespoon fried shallot flakes

  • 2 stalks daun sup/Chinese celery

  • 3 oz. (90 g.) peanuts (fried & skinned) 

Ground Ingredients:

  • 6 shallots

  • 1 clove garlic

  • 1/2-inch (1.2-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1/2 teaspoon ketumbar/coriander seeds

  • 1 thin stalk serai/lemon grass (sliced)

  • 1 slice laos/galangal

  • 3 buah keras/candlenuts

Serves 4


Method:

  1. Combine chicken, ground ingredients, coconut milk, leaves and salt to taste. Cook on medium flame till chicken is done. Remove chicken and keep aside.

  2. Add rice to the coconut milk-mixture. Cook on medium flame till rice is done.

  3. Adjust seasoning. Discard leaves, remove and dish up immediately.

  4. Arrange chicken on the rice.

  5. Garnish with Chinese celery, peanuts and fried shallot flakes. Serve hot.
