Dark Sago Pudding (Bubur Sagu) Recipe
Ingredients

1 cup sagu/sago
(washed & soaked 2 hours)
-
1 1/4 cups thick santan/thick
coconut milk
-
1 slice ginger root
-
gula Jawa/palm sugar
to taste
-
2 cups thick santan/thick
coconut milk
-
salt to taste
-
2 daun pandan/Screwpine
leaves (torn)
Serves 4
Method:
-
Drain sago. Mash it through a sieve. Add coconut milk
and ginger.

Bring sago-mixture to the boil. Add palm
sugar, to taste. Stir-cook till thick and done.

Remove from flame. Pour into a mould, discarding ginger.

Bring coconut milk-mixture to the boil. Stir till
heated through and fragrant. Remove from flame. Discard Screw pine
leaves.
-
Un-mould and serve sago pudding with
the coconut milk.
