Asian Rice, Noodles and Snacks Recipes - Indonesian Dark Sago Pudding (Bubur Sagu) Recipe

Ingredients

  • 1 cup sagu/sago (washed & soaked 2 hours)

  • 1 1/4 cups thick santan/thick coconut milk

  • 1 slice ginger root

  • gula Jawa/palm sugar to taste

  • 2 cups thick santan/thick coconut milk

  • salt to taste

  • 2 daun pandan/Screwpine leaves (torn)

Serves 4


Method:

  1. Drain sago. Mash it through a sieve. Add coconut milk and ginger.

  2. Bring sago-mixture to the boil. Add palm sugar, to taste. Stir-cook till thick and done.

  3. Remove from flame. Pour into a mould, discarding ginger.

  4. Bring coconut milk-mixture to the boil. Stir till heated through and fragrant. Remove from flame. Discard Screw pine leaves.

  5. Un-mould and serve sago pudding with the coconut milk.
