Asian Rice, Noodles and Snacks Recipes - Indonesian Peanut and Coconut Snacks (Serunding Kacang) Recipe

Ingredients

  • 1lb. (500 g.) shelled large kacang/peanuts (blanched & skinned)

  • peanut oil for deep-frying

  • 2 daun salam/bay leaves

  • juice of 1 jeruk nipis/lime

  • 2/3 peeled, grated coconut (dry-fried)

  • salt to taste 

Ground Ingredients:

  • 2 cloves garlic

  • 1 tablespoon brown sugar

  • 4 shallots

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 teaspoon jintan putih/white cumin seeds

  • 2 teaspoons ketumbar/coriander seeds

  • 1 slice laos/galangal

Serves 8-10


Method:

  1. Heat oil and deep-fry peanuts till golden brown. Remove and drain.

  2. Reduce oil to 2 tablespoons. Stir-fry ground ingredients and salam or bay leaves, till cooked.

  3. Add lime juice and season to taste. Remove from flame and mix in peanuts and coconut.

  4. Serve as a snack.
