Asian Rice, Noodles and Snacks Recipes - Indonesian Peanut Wafers (Remeyek Kacang) Recipe

Ingredients

  • 6 oz. (185 g.) rice flour

  • 1 tablespoon corn-flour

  • 1 1/2 teaspoons ketumbar/ground coriander

  • 1/2 teaspoon jintan putih/ground white cumin

  • 1/4 teaspoon kunyit/ground turmeric

  • 3/4 teaspoon salt

  • 1/2 teaspoon ground white peppercorns

  • 3 buah keras/candlenuts (ground)

  • 1 1/4 cups santan/coconut milk

  • 1/2 lb. (250 g.) shelled kacang/peanuts (roasted & skinned)

  • 2 shallots (finely chopped)

  • 2 cloves garlic (finely chopped)

  • oil for deep-frying

Makes 12-14


Method:

  1. Gradually add coconut milk to sifted ingredients and stir into a smooth, thin batter.

  2. Add peanuts, shallots and garlic. Stir well to mix thoroughly.

  3. Heat oil for deep-frying. Turn flame to medium and drop in tablespoons of peanut mixture, allowing each to spread to a thin wafer. If batter is too thick add more coconut milk.

  4. Fry wafers till golden on both sides. Re­move and drain. Repeat with the remaining ingredients.

  5. Arrange peanut wafers on a serving plate and serve with a beverage.
